Gnocchi may well have been the first form of pasta, shaped simply by snipping off little bits from a ball of dough and cooking them in boiling water. And while nearly everyone thinks of potatoes when the word gnocchi is pronounced, the original dumplings were likely made only with flour and water: potatoes came into the mix much later, in the eighteen century when Italians lost their fear of this possibly poisonous New World tuber. In reality, each region of Italy offers its own distinctive gnocchi, some based on hearty buckwheat flour, others on sweet pumpkin puree or fresh ricotta.
